About the variety
This lot is a single-farm blend of Bourbon-family varieties, put together for a consistent, sweet profile at a friendlier price than single-variety microlots.
Where it grows
Tolima lies in central Colombia on the slopes of the Central Andes. Its southern municipalities, such as Planadas and Rioblanco, have become a reference for high-altitude specialty coffee. San Rafael farm sits at 1700 m in Santa Isabel.
Processing
Washed: the cherries are depulped, fermented to loosen the mucilage, washed and dried. This gives clean, bright cups that show the variety and terroir clearly.
Co-fermented: the producer adds cultures or fruit during fermentation to shape the profile. Details for each lot come with the samples.
