Cup profile

Sidra Bourbon is a washed specialty lot from La Reserva, Saladoblanco, Huila, grown at 2000 m and scored 88 points. In the cup: peach, honey, nectarine, white roses.

About the variety

Sidra is a rare variety believed to come from a Bourbon × Typica cross developed in Ecuador. It is sought after for intense florals and bright fruit.

Where it grows

Huila, in the south of Colombia, sits between the Central and Eastern Andes around the headwaters of the Magdalena River. It is the country's largest coffee-producing department and the home of many of its best-known specialty lots. La Reserva farm sits at 2000 m in Saladoblanco.

Processing

Washed: the cherries are depulped, fermented to loosen the mucilage, washed and dried. This gives clean, bright cups that show the variety and terroir clearly.

Co-fermented: the producer adds cultures or fruit during fermentation to shape the profile. Details for each lot come with the samples.
