Cup profile
Condor is a washed specialty lot from Peñas Blancas, Acevedo, Huila, grown at 1750 m and scored 87.5 points. In the cup: tangerine, panela, milk chocolate, passion fruit.
About the variety
Pink Bourbon was first found in Huila and has pink cherries. Despite the name, genetic studies link it to Ethiopian landraces rather than classic Bourbon, which explains its floral, juicy profile.
Where it grows
Huila, in the south of Colombia, sits between the Central and Eastern Andes around the headwaters of the Magdalena River. It is the country's largest coffee-producing department and the home of many of its best-known specialty lots. Peñas Blancas farm sits at 1750 m in Acevedo.
Processing
Washed: the cherries are depulped, fermented to loosen the mucilage, washed and dried. This gives clean, bright cups that show the variety and terroir clearly.
Co-fermented: the producer adds cultures or fruit during fermentation to shape the profile. Details for each lot come with the samples.
