Cup profile

Cordillera is a regional washed lot from Risaralda, blended from Castillo, Caturra and Colombia grown at around 1500 m. Scored 84, it is built for roasters and coffee chains that need a dependable Colombian coffee in volume. In the cup: dark chocolate, roasted nuts, brown sugar, red berries.

About the variety

A regional blend of Castillo, Caturra and Colombia, the varieties planted on most Colombian farms. Castillo and Colombia were bred by Cenicafé for resistance to coffee leaf rust; together they give a dependable, balanced cup in volume.

Where it grows

Risaralda is part of Colombia's Coffee Axis (Eje Cafetero), the historic heart of the country's coffee culture.

Processing

Washed: the cherries are depulped, fermented to loosen the mucilage, washed and dried. This gives clean, bright cups that show the variety and terroir clearly.

The lot was fermented only with its own microorganisms, with nothing added.
