About the variety

Ají Bourbon is one of the rare Bourbon-family selections grown by specialty producers in Huila; ají is the Spanish word for chili pepper.

Where it grows

Huila, in the south of Colombia, sits between the Central and Eastern Andes around the headwaters of the Magdalena River. It is the country's largest coffee-producing department and the home of many of its best-known specialty lots. La Reserva farm sits at 2000 m in Saladoblanco.

Processing

Honey: the skin is removed but the sticky mucilage stays on the bean while it dries, adding sweetness and a rounder body.

The lot was fermented only with its own microorganisms, with nothing added.
