Cup profile
Red Bourbon is a natural specialty lot from El Diviso, Pitalito, Huila, grown at 1680–1850 m and scored 88 points. In the cup: chocolate, caramel, red grapes, white wine, passion fruit.
About the variety
Bourbon takes its name from Bourbon Island (today Réunion), where French missionaries planted it in the 18th century. Red Bourbon is the classic form: sweet, balanced and full-bodied.
Where it grows
Huila, in the south of Colombia, sits between the Central and Eastern Andes around the headwaters of the Magdalena River. It is the country's largest coffee-producing department and the home of many of its best-known specialty lots. El Diviso farm sits at 1680–1850 m in Pitalito.
Processing
Natural: whole cherries are dried with the fruit still on the bean. Expect more fruit, sweetness and body.
Co-fermented: the producer adds cultures or fruit during fermentation to shape the profile. Details for each lot come with the samples.
