Cup profile
Santa Rita is a regional washed lot from Huila (Santa Rita), blended from Castillo, Caturra and Colombia grown at around 1800 m. Scored 85+, it is built for roasters and coffee chains that need a dependable Colombian coffee in volume. In the cup: red grapes, malt, panela, lime.
About the variety
A regional blend of Castillo, Caturra and Colombia, the varieties planted on most Colombian farms. Castillo and Colombia were bred by Cenicafé for resistance to coffee leaf rust; together they give a dependable, balanced cup in volume.
Where it grows
Huila, in the south of Colombia, sits between the Central and Eastern Andes around the headwaters of the Magdalena River. It is the country's largest coffee-producing department and the home of many of its best-known specialty lots.
Processing
Washed: the cherries are depulped, fermented to loosen the mucilage, washed and dried. This gives clean, bright cups that show the variety and terroir clearly.
